Ghee is typically prepared by simmering butter, which is churned from cream, skimming any impurities from the surface, then pouring and retaining the clear liquid fat while discarding the solid residue that has settled to the bottom. Spices can be added for flavor.
Ghee is a fat-rich anhydrous dairy product. It is produced by heating unsalted Cow milk butter or cream above 100 degrees C until the butterfat and milk solids separate. Further cooking results in milk solids caramelization and gives Ghee the characteristic aroma, flavor, and golden color.
